Goulash in a Cauldron
In a pot or cauldron, heat the oil. Add red onion, white onion, and carrot.
Once the onions gain color, add the diced meat and sauté until browned.
Add enough water to cover all the meat. Season with black pepper, mixed spices, and cayenne pepper. Cook on low heat for 45 minutes.
When the meat is halfway tender, add the sweet tomato sauce and more water. Mix well and let it simmer over high heat for 2 hours.
Add water if needed during cooking.
In the last 10 minutes of cooking, add bay leaves.
Transfer the goulash to clay pots and place them in the oven at 200°C (392°F) for 10 minutes.
